It was Easter bank holiday Monday and breakfast time
I had just arrived back from a weeks family holiday in France on Easter Sunday and the fridge were virtually bare
But luck was on my side
After a closer inspection I managed to rustle up some ingredients and proceeded to knock up something a little different
And as luck had it, my little experiment paid off
Breakfast was just as tasty as you could’ve imagined from the picture below
In fact the recipe was so good I had to share it with you as I would bet my house on you loving it too
All you need is some organic back bacon, organic or free range eggs, feta cheese, black pepper and coconut oil to make this healthy protein packed breakfast treat (ingredients can be substituted but at the risk making this treat slightly less healthy)
So how do you make it?
Grease a muffin tin with coconut oil and heat in the oven for 5 minutes
Remove tin carefully from the oven and line the greased tins with the bacon. Crack an egg into each section adding your cheese and sprinkling the black pepper on top.
Bake for 15 minutes at 180OC
To serve, my choice is to grill some asparagus heads that have been drizzled in olive oil, then sprinkled with sea salt and black pepper. On serving the asparagus that I grilled until slightly browned is to grate some parmesan cheese on top, or failing that and being a little naughty some extra mature chedder cheese, yum yum!
